The bilona method (بلونا) is the ancient, time-honored process of making desi ghee that has been passed down through generations in Pakistan and India. Unlike modern industrial methods, bilona produces ghee with superior taste, aroma, and nutritional properties.

What is the Bilona Method?
The bilona method is a multi-step process that transforms fresh cow's milk into the purest form of ghee:
Step 1: Fresh Milk Collection
Every morning, we collect fresh A2 milk from our Sahiwal cows. The milk is immediately brought to our kitchen—no storage, no transportation delays.
Step 2: Curd Formation
The milk is boiled, cooled, and set with natural culture to form dahi (yogurt). This fermentation takes 8-12 hours and develops the characteristic flavor.
Step 3: Hand Churning (Bilona)
Here's where the magic happens. The curd is churned using a traditional wooden churner called "madhani" or "bilona". This process takes 30-45 minutes of continuous rhythmic churning.
Machine centrifuges spin at 10,000+ RPM, destroying delicate nutrients. Hand churning is gentle, preserving the natural structure of fats and vitamins.
Step 4: Makhan Extraction
The churning separates white butter (makhan) from buttermilk (lassi). We collect every bit of this precious makhan.
Step 5: Slow Cooking
The makhan is slowly heated on a low flame until all moisture evaporates and the milk solids settle at the bottom. This can take 2-3 hours of careful monitoring.
Step 6: Filtering & Bottling
Once the ghee reaches the perfect golden color and releases its signature aroma, it's filtered through cotton cloth and bottled while still warm.
